Now the drivers side seat back adjuster is broke, is there a fix for them?

The seat back adjuster is a big assed knob that strips all the time. When you adjust the up or back of the seat you have to take your weight off of it as you adjust, other wise strip city. Just buy another or get one from a "yard" or ebay.

I did some looking in an old RMW catalog, which is a great reference for VW parts and especially VW part numbers, and found the knobs are part #1718816712 and that number is cross referenced to Beetles as well. And still available.
